It is a huge misconception to assume that all salads must contain a leafy green. Not that I don’t love leafy greens - I advocate for them fully. But sometimes, you just want all the toppings…

INGREDIENTS

  • 1 fennel

  • 1 pear

  • 1/2 cup of dry cranberries

  • 3 Persian cucumbers

  • 1 full head of celery

  • 1 full jicama

  • 1 cup of chopped or torn apart mint leaves

  • 3 lemons, squeezed + generous amount of EVOO

  • (+ crumbled feta cheese, if you’re not vegan)

INSTRUCTIONS

  • Chop everything up, toss in a bowl with lemon juice and EVOO
